Apple Cider

mmmmm Apple Cider

I have two different ways of making this, and while both are quite simple, I find I like them better than fancier mulling spice mixes.

1) Put some apple juice in a pot on the stove on low heat
-- spinkle in whole cloves (probably about 20 in a small pot that makes 2-4 measuring-cups) worth of cider.
-- put in about 3 cinamon sticks, but if you don't have those you can dump in a bunch of ground cinamon
-- cover the pot and let it warm on low heat for half an hour or so, don't let it boil or get too hot because then the cider can start to taste a bit burnt.
-- Sometimes I add a little boiling water when I serve it if I feel like it's too thick/sweet which can happen when it's been steaming (and thus loosing water) for a while.

2) Buy some Bengal Spice tea (the Celestial Seasonings brand): [link]
-- put some apple juice in a pot on the stove and heat it on meduim-high till it begins to simmer
-- pour the hot apple juice over the spice tea bag in each cup and stir it around a bit and let the tea steep
